Creamy Tahini Lime Dressing with Cilantro

Tangy, creamy, and herbaceous, this dressing makes a big impact with simple ingredients.

Ingredients

  • ½ cup tahini
  • cup finely chopped leaves and tender stems of fresh cilantro
  • ¼ cup fresh lime juice (juice of about 2-3 limes)
  • ¼ cup cold water (add more 1 Tablespoon at a time if needed)
  • 2 Tablespoons garlic-infused olive oil (or olive oil + 1 minced/grated garlic clove)
  • ¼ teaspoon salt
  • ¼ teaspoon fresh cracked black pepper

Instructions

  • Combine all ingredients in a small bowl or jar. Mix them thoroughly with a long-stem fork. The mixture should thicken up.
  • If the mixture is too thick, add cold water 1 Tablespoon at a time until desired consistency is reached.
  • Taste the dressing and add more lime juice, salt, or pepper as desired.
  • Store this dressing in an airtight container in the refrigerator for 3-4 days.
