- ½ cup tahini
- ⅓ cup finely chopped leaves and tender stems of fresh cilantro
- ¼ cup fresh lime juice (juice of about 2-3 limes)
- ¼ cup cold water (add more 1 Tablespoon at a time if needed)
- 2 Tablespoons garlic-infused olive oil (or olive oil + 1 minced/grated garlic clove)
- ¼ teaspoon salt
- ¼ teaspoon fresh cracked black pepper
Combine all ingredients in a small bowl or jar. Mix them thoroughly with a long-stem fork. The mixture should thicken up.
If the mixture is too thick, add cold water 1 Tablespoon at a time until desired consistency is reached.
Taste the dressing and add more lime juice, salt, or pepper as desired.
Store this dressing in an airtight container in the refrigerator for 3-4 days.
