    This beautiful cold-brewed Mother Earth latte combines the bright vegetal notes of matcha with soothing floral butterfly pea flower tea for a drink that is both visually stunning and packed with antioxidants.     Ingredients and Substitutions

    1. Matcha powder: Provides a robust flavor and beautiful green color. Use high-quality matcha for the best results.
    2. Cold water: Used to cold brew the matcha and butterfly pea flower tea.
    3. Maple syrup: Adds natural sweetness. Substitute with other liquid sweeteners like agave nectar, simple syrup, or vegan honey to taste.
    4. Butterfly pea flower powder: Also sometimes referred to as blue matcha, butterfly pea flower powder brings a vibrant blue color and subtle floral taste to the latte. You can also use blue spirulina, though it won't add that subtle floral flavor. 
    5. Ice cubes.
    6. Unsweetened almond milk: The creamy base of this latte. Use any milk you prefer, such as oat milk, soy milk, or coconut milk.

    Step-by-Step Instructions

    1. Sift: Sift the matcha powder into a small jar with an airtight lid.

    2. Brew: Add ¼ cup of cold water to the jar, tightly close the lid, and shake the jar for about 30 seconds until no powder remains.

    3. Sweeten: Remove the jar lid, add liquid sweetener, tightly close the lid again, and shake the jar a few more times until the sweetener is well-combined with the cold-brewed matcha.

    4. Pour: Slowly pour the cold-brewed matcha tea into a tall (16-ounce) glass.

    5. Ice: Add several ice cubes, filling the glass. 

    6. Top: Slowly pour the milk onto the ice cubes.

    7. Brew again: Rinse the jar and sift the butterfly pea flower powder into it. Add ¼ cup of cold water, tightly close the lid, and shake the jar again until no powder remains.

    Tips

    • Use high-quality matcha and butterfly pea flower powders for the best latte flavor. I love the Ippodo tea brand for my matcha and ancient choice butterfly pea flower powder. 
    • Avoid Clumps by sifting the powders to ensure a smooth drink. A little sifter is just a few dollars and makes all the difference. 
    • Some milks will make a nicer layered effect than others. I find that soy milk can create a more streaky effect (like in my cold brew latte), and oat milk often creates beautiful swirls (like in my blue matcha latte). 
    • Eco Tip: Plant-based milk (even almond milk!) uses less water and land and emits less greenhouse gases than dairy milk production.

    • Dirty Matcha Latte: Need a bit more pep in your step? Instead of butterfly pea powder, use cold brew with your matcha for a bolder cuppa! I like to hot-brew my matcha for this latte so the matcha tastes bold enough to stand up to the cold brew coffee flavor. 
    • Vanilla Infusion: If you're using unflavored milk, add a splash of alcohol-free vanilla extract to the milk for another layer of floral flavor.
    • Cold-Brewed Blue Matcha Latte: For a caffeine-free (but still antioxidant-rich) drink, make this blue latte.

    Can I use regular milk instead of almond milk?

    Yes, you can use any milk, whether it’s dairy or another plant-based milk like soy or oat milk.

    Where can I find butterfly pea flower powder?

    Butterfly pea flower powder is often available at specialty tea shops, health food stores, or online retailers like Amazon. Look for it in the tea or natural supplements section.

    Can I make this latte ahead of time?

    You can prepare the matcha and butterfly pea tea layers and store them separately in the fridge. When ready to drink, assemble with ice and milk. You can also adjust the yield in the recipe card to batch-prepare your lattes for Earth Day celebrations or gatherings of eco-minded friends.

    Ingredients

    • ½ teaspoon matcha powder
    • ½ cup cold water, divided
    • 1-3 teaspoons maple syrup (or preferred liquid sweetener, to taste)
